Chia Pudding

Happiness is… always having the next snack prepared.  Chia pudding is a great example of how with just a few ingredients you can make something healthy, delicious and satisfying.  The bonus for me is that I make this by request.

Chia Pudding

Ingredients:

1 cup of unsweetened non-dairy  milk

1/4 cup of raw chia seeds

1 tbsp of raw unpasteurized honey or pure maple syrup

3 tbsp raw cacao powder

3 tbsp mini chocolate chips (optional)

Method:  Blend milk, maple syrup and cacao powder until well combined.   Pour mixture into a glass bowl, fold in chia seeds, top with a few chocolate chips (if using), and chill in the refrigerator for at least 2 hours or overnight to set. 

Transfer a few tablespoons of chia pudding into a bowl and enjoy!
