
Quinoa Pizza is an example of fast food at it’s best! With just a few ingredients you can turn leftovers into a completely new meal in about 15 minutes. I’ve made many many variations of this pizza by switching up the toppings and adding spices to the dough. Make it your own and use flavours you enjoy.
Quinoa Pizza
Ingredients:
1 cup of cooked quinoa
1 egg
1/4 cup of grated cheese or nutritional yeast
2 tablespoons of extra virgin olive oil + more for the pan
1 tsp of salt & a pinch of pepper
Method: Preheat oven to 350. Warm a medium sized cast iron pan, or oven safe pan with a few teaspoons of olive oil on medium heat. In the meantime, add all the ingredients to a medium bowl and mix until well combined. Pour the quinoa mixture into the pan and flatten to approximately 1/4 inch thick. Cook for a few minutes until the bottom is lightly browned and it comes together well enough to flip. Flip the crust, add toppings of your choice and place the pan into the preheated oven for another 5-10 minutes or until lightly browned.
Remove from the oven, and slide crust out of the pan onto a cutting board. Let cool for a few minutes, cut and serve!
