It’s been a while since my last post, but now I’d like to share a yummy pancake recipe with you. These pancakes have become a favourite breakfast option in my house. This sugar-free, grain-free, and nut-free recipe makes approximately a dozen+ 4-5″ pancakes. We keep left overs in the fridge for about a week. I warm up a few in the toaster, drizzle with raw honey and top with dark chocolate shavings. I’m sure whatever topping you choose, these pancakes will become a favourite for you too!
Yummy Pancakes
Ingredients:
1/4 cup coconut flour
1 pinch of cinnamon
1 tbsp raw organic honey
1/4 yogurt (dairy free option: plain unsweetened coconut yogurt)
4 eggs
Coconut oil, ghee, or butter for frying
Directions:
Mix all ingredients until smooth, and let the batter sit for approximately five minutes. In the meantime, warm up and grease your griddle/pan on medium heat. Once your griddle/pan is hot pour 1-2 tablespoons of batter for each pancake. Cook until golden brown, a couple of minutes on each side. Repeat with remaining batter, adding more oil, ghee or butter as needed. Top with maple syrup, honey, sun butter, berries or any topping of your choice.
